I was at the store staring at the steak prices last weekend.. not wanting to spend $18 on a single meal, and wanting to do some meal prep for the week... I decided to get a London broil steak. It was something like $8/lb. I bought a big one probably around $20 for 2.5-ish pounds. With this being a tougher cut, I decided to marinate it and use it for homemade mexican style meals.
Here's what I did. I cut lengthwise into three big strips. Salted them thoroughly, let them sit in the fridge for a couple hours. Then I did the marinade which was. Olive oil, horseraddish vodka, apple cider vinegar, lime, pepper, chili powder, red pepper, cumin, garlic, onion powder, hot paprika.
I let it marinade for a few hours. Then I smoked them my kettle grill with cherry wood until med-rare/med, then seared them off. They came out a bit overdone but that was fine for how I planned to use them.
So I also made scratch made tortilla's, salsa, pico, and quac. And I had one can of black beans and sour cream, lettuce, cheese as fixin's.
Sunday - Made a burrito
Monday - Made another burrito, but different
Tuesday- Quesadiller
Wednesday - More different quesadiller
Thursday - Fajita's
I also had enough for a small lunch on two day's for work. One leftover corner of quesadilla, and today a taco.
