I'm sure I've mentioned this before, but a seafood casserole can make for a tasty meal, and you can modify it with ease once you figure out your preferred seasoning combination...
Tonight's version:
Olive oil (to lightly coat the sides and bottom of the glass loaf pan)
Monkfish (cut into fairly small pieces)
Onion (sliced thin, lengthwise)
Pepper (sliced thin, lengthwise)
Zucchini (sliced thin into coins)
Mushrooms (sliced thin)
Butter (cut into either tablespoons or small cubes)
Seasoning (granulated garlic, Cajun seasoning, Homemade seasoning blend)
Panko breadcrumbs (either buy the kind with cheese in it, or finely grate fresh parmesan into it)
