Only things I would change - much less salt (can't have the sodium), and I would cook the onions and mushrooms in separate pans, combining them when they onions start to get color (onions need the time, as do the mushrooms). cooking the chicken in the other pan.

But, damn it looks good. Probably good with shrimp, beef, or pork as well.
I agree with the salt. I don't even have a salt shaker. I never use it.

I hear you, but...

I'd be making it in a wok (and I would be probably be using either peanut or avocado oil, as I almost never use vegetable oil anymore), so it's no problem for me to use the same cooking utensil and switch out, since that's something I've been doing for decades.

avo oil is the shit. i even bake w/it.
